Directions:
Bring water almost to a boil (we use a teapot). Pour chia seeds into a heat-proof water pitcher. Add heated water and stir until the chia seeds are evenly dispersed. Let the pitcher sit overnight in the refrigerator. At this point, your “water” should now be a thick gel. To make the actual drink, poor chia seeds into a large glass and add your juice of choice. I typically make the proportions 1/2 chia seeds, 1/4 juice, 1/4 water. This reduces the calories and sugar content of the drink (from the juice). Now just stir and enjoy!
**I make this in bulk, so I triple the recipe and keep the remaining chia seeds/gel in the pitcher in the fridge.
