Directions:
Preheat oven to 350°.
Mix all dry ingredients (baking powder, baking soda, cinnamon, apple pie spice, flour, flaxseed meal, oats). Add carrots, apples, and nuts. Mix until combined.
In a separate container, mix wet ingredients (applesauce, milk, egg, banana, vanilla extract). Mix well. Combine wet ingredients with dry ingredients. Stir until dry ingredients are moist. Do not over-mix. Fill prepared muffin tins 3/4 full. Bake 15- 20 minutes. Makes 12 Muffins.
