It's been a long, exciting, exhausting experience that I'll never forget. I have a lot of work to do to progress in the next level of competition (international). I felt good fighting in my new weight category--I think it'll be a good fit for me. Nerves and lack of tournament experience at this level definitely got the best of me. I know I have the knowledge and technique to succeed at this level, it's just a matter of getting getting the experience and confidence. It was intimidating going up against a Moroccan, as she had home field advantage and the whole crowd behind her. The audience was crazy--super loud, chanting, cheering, clapping, and beating drums. Was like nothing I've ever encountered before; definitely intimidating. Overall, it was a really great experience. I learned a lot and accomplished some of my "mini goals"; so the trip was definitely a success in my eyes. I have a ways to go to get to where I want to be in the sport, but I have a plan to get there and the work starts up again as soon as I get back home.

Directions Combine all ingredients except chicken in a slow cooker. Add chicken. With a large spoon, stir all together, coating chicken well. Put the lid on and cook on low until the chicken is tender, 5-6 hours. After it's cooked, shred with a fork. Stir well and serve. Ingredients
