Since nationals is about 2 weeks away and I completely binged last week, I decided it was time to clean up my diet again. So, this past Sunday I spent 4 hours preparing 6 different (healthy) meals for the week. I know the next couple weeks will be tiring; and the last thing I want to worry about when I'm tired is making food and/or making healthy food decisions. To make life easier I made:
I used a total of 10 pounds of chicken breast and 5 pounds of lean ground turkey. (Mind you, I make these meals to feed myself AND Justin...there's no way I could eat all of that myself!)
These recipes are packed with protein, fiber and veggies!...everything I need to keep me going, lean, and full. Here's another plus: you can individually freeze the turkey burgers for quick meals for the future. We also freeze the chili...When you're ready to eat, take it out of the freezer, put it into a pot on the oven and heat! Quick, yummy, healthy meals in minutes!
- Taco stuffed zucchini boats
- BBQ pulled chicken
- Hot chicken tenders (like hot wings)
- Turkey chili
- Black bean soup
- Turkey burgers
