WARNING: This recipe is delicious! I ate two loaves of this banana bread in two days (by myself)...not lying. Eat in moderation...if you can! :)
Directions:
Preheat oven to 400 degrees
Mix all dry ingredients (except the ground flaxseed if you are not using eggs) in a large bowl. (Flours, baking soda, coconut sugar, cinnamon, walnuts)
In a separate bowl, mix together all wet ingredients (applesauce, agave nectar, eggs, bananas, yogurt, vanilla). Incorporate the dry mixture slowly with the wet ingredients. Mix on low speed until well-combined, but don't over mix.
Spray pan with non-stick cooking spray or use coconut oil instead. Put the mixture in the oiled loaf pan. Bake for 45-50 minutes until cooked through.

1 tablespoon ground flaxseeds
3 tablespoons of water
Stir together until thick and gelatinous

- 1/4 c. organic, unsweetened applesauce

- 1/3 c. plain greek yogurt (or vanilla)
- 1 teaspoon cinnamon
- 1/4 c. chopped walnuts
