Oh, my...I am dying right now. I LOVE waffles (any sweets, actually), but they aren't they healthiest food in the world. UNTIL NOW. :) I found a way to make delicious, healthy waffles! Here's the recipe:
You can put anything you want in them...but for this recipe I added:
Raw blueberries
Sliced almonds
On top, I used Agave Nectar instead of maple syrup to keep the calories a bit lower.
These waffles are low in calories, high in fiber and high in omega 3's! Yay! You can indulge without the guilt! Enjoy!
- 1 C.Hodgson Mill's Whole Wheat Buttermilk Pancake Mix (that's the kind I used...)
- 1/2 C. Flax seed meal (again, I use Hodgson Mill)
- 1/2-3/4 C. Almond milk (I use Silk Pure Unsweetened Vanilla Almond Milk)
- 1 egg
- Drizzle of olive oil (for those who follow recipes and need exact measurements, 2 T.)
- Pinch of cinnamon/all spice/nutmeg (whichever you prefer)
- Drop of vanilla extract (to make it EXTRA yummy!)
