So, I tried another "dinner for one" type meal. I have to say, I'm getting REALLY good at this. Maybe a little too good. :) Anyways, so I threw together this super quick and healthy pasta dish. It may look like a lot of ingredients, but it's really not. This meal literally took 7 minutes to put together--as long as it took for the noodles to boil. And, I have to say...it was ridiculously delicious. I made extra (the following day) to have a few portions for multiple dinners for the work week.

It's as simple as this:
Ingredients:
- Whole wheat pasta noodles (or spinach noodles are yummy too)
- Minced garlic
- Chicken sausage (I did spinach & garlic flavor)
- Fresh basil
- Fresh tomatoes (plum or cherry work best)
- Oil (I used sesame oil)
- Scallions
- Mushrooms
- Kale
- Organic marinara sauce (optional--to give it a sweetness and the sauce a thickness)
It's as simple as this:
- Boil the noodles (5-7 minutes)
- Toss the oil & minced garlic in a sauce pan, at medium-low heat
- Cut up the chicken sausage (it's pre-cooked...score!)
- Cut up the veggies (kale, basil, mushrooms, scallions, tomatoes)
- Add the veggies & sausage to the sauce pan, put a little of the marinara in the pan (if you wish), then just cook a few minutes until it's warm.
